May it's my use case, but sometimes I find an "unread" count on a channel that refers to someone who replied to a very old thread (may be days or weeks ago). When this happens finding the "bumped" old thread is very difficult and I often resort to open the Slack app to find it.
Few ideas how to fix it. The "Threads" metachannel of the official app is a good way, but a "show only unread thread" option for the channel should also solve it, or as you feel is better. 🙂 Thank you!

This is indeed a big issue (running into it myself quite often), I've started to work on that a long time ago and have a partial implementation I "just need to finish" :-)
I don't like the threads group in the Slack app, it feels more like a hack.
I have two things in mind to address the issue:
a shortcut / menu to "jump to next unread", which would navigate you to the thread which has unreads
a popover attached to the unread button, you click the unread, get an overview how it comes together and allows you to jump to the threads
I've also considered showing unread threads (or maybe threads in general) as subfolders in the sidebar (below the channel). Not sure yet, might be viable as well.

fwiw, your first proposed solution it's probably easier to implement and it would be a solution. I fully agree with your comment on the threads group. 🙂
